Easy & Healthy Butternut Squash Soup
I'd really wanted to be able to make a butternut squash soup that was on the healthier side, and with just a few ingredients.
Couple of thoughts:
- Struggling to mince the garlic? Or don't like the taste of it but you'd like to be able to use it? Juts grate it instead - you'll barely notice the flavour then.

- Add chilli powder or chilli flakes when stir-frying the onions and garlic for an additional flavour.
I personally didn't add much chilli powder because I don't want to lose the taste of the butternut, but each to their own.
