Skinny Veg Lasagna

I love lasagna. I've been trying to get a recipe right, inspired from Pinch of Yum for a while now (recipe below).

4 weeks to be exact.

I'd experimented with different veggies, types of lasagna sheets, and various cheeses - before I was finally satisfied last night! Suffice to say I won't be making this recipe for a while now (as easy and delicious as it is).


Sweet potatoes, spinach, onions, and peppers (green and red)


Tomato & Basil ready pasta sauce.


Ricotta & Mozzarella (however you can switch the cottage cheese for ricotta if you'd prefer more protein and less fat).

I'd also advise to buy fresh mozzarella cheese and grate it at home instead of buying the pre-shredded packet cheese.

I've experimented with both semi whole-grain & spinach lasagna noodles - both were great.
